BEAT eggs and lemon peel until mixture is light and fluffy. Add sugar a little at a time, beating continuously. Continue beating until thick. Slowly stir in the coffee and then add brandy or cognac.

here’s a recipe from a good friend in Dallas, Texas, Ron Weunsch. Ron is an avid hunter who likes a warm campfire, close friends, and a Campfire Cafe on a brisk fall evening.
SERVES: 6
PEEL orange into one, long peel. Do the same with lemon. Stud each long peel with cloves (eight each). Over campfire, heat water in a large, open pan. When water is boiling, add coffee and allow to boil for five minutes. When time is up, add one more cup cold water to settle out grounds.
IN second pan, heat studded orange and lemon peels, sugar cubes, and cinnamon pieces until sugar melts. Add strained, hot coffee to mixture. Slightly warm cognac or brandy.
IGNITE. Holding orange and lemon peels with heatproof tongs, slowly pour burning brandy down peels into hot coffee. Strain again and serve in large mugs.
